There is a saying for white tea that goes “First Year it's Tea, In the Third Year it's Medicine, after Seven Years it's Treasure!” This white tea made from “Ying Xiang,” a relatively new varietal in Taiwanese tea family which was grown organically, was processed into white tea in the spring of 2018. It was of course immediately a tea the moment it was made a year ago. However, we decided to store it for a full year to see how it is able to transform.

The transformation is quite unique. With a subtle tropical fruit like character and an extremely soft tea body, this Ying Xiang turns out to be not just tea according to the saying, but something even more interesting since we did something different during the processing to ensure the character of this tea is warm enough even as a white tea.
