I had the distinct pleasure of watching and helping this tea be processed. I had just gotten over covid and my senses were barely returned, for sure not fully, yet it was unmistakable how different this tea was handled. It was made side by side with the owners/farmers version. Our old dog simply does tea differently, and executed a flawless withering compared to the farmers. Maybe you might think that because of the price he wouldn’t put his energy and attention as seriously on it, but really, was a total joy to be a part of maintaining the quality standards at Taiwan Sourcing. I like to use a lot of leaf with this one 10g/120ml - around 180 to 195 ish brings out some super interesting sweet sugarcane & cotton candy beyond the core varietal bright tangy vegetation.
